Inspired by a Woman's Traditional Knowledge
The entire production process of PAYAGPURE — the Bilona method, the curd culture, the slow simmer, the texture and colour benchmarks — was documented from the lived knowledge of Smt. Vandana Tiwari and the elder women of Payagpur village.
This is not just intellectual heritage. It is women's heritage, and we honour it openly.

PAYAGPURE's Standard Operating Procedure for ghee production is based on practices perfected by village women over generations.
- Quality benchmark — granular texture, golden colour, nutty aroma — defined by Smt. Vandana Tiwari's standard, not by a lab manual
- All new production staff are trained by experienced village women who carry this traditional knowledge
Women Employment at the Farm & Production Unit
PAYAGPURE is committed to ensuring that a minimum of 60% of our workforce is made up of women from local villages — in dignified, well-paid, meaningful roles.
- Women lead curd setting, Bilona churning and ghee simmering — the most skill-intensive steps
- Glass jar cleaning, filling, labelling, sealing and carton packing led entirely by local women
- Sensory quality testing — colour, aroma, texture — performed by trained women quality inspectors
Empowering Rural Women Farmers
PAYAGPURE specifically prioritises women-headed farmer households and women-owned cows in our sourcing partnerships.
- Women farmers who own Gir or Sahiwal cows receive a premium of ₹5/litre above standard A2 milk rate
- Free A2 DNA testing for cows owned by women farmers — enabling access to premium markets
- Free veterinary consultation through our network, twice per month
- Target: 40% of milk supply from women-owned farms by Year 3
Women Leadership in Export Business
The global food export business has historically been male-dominated. We are changing that — starting from our own boardroom and operations.
- Women hold key roles in export documentation, compliance, and international buyer relations
- Export team trained in APEDA procedures, FSSAI export certification, and international food labelling
- Actively participating in APEDA's Women Exporters Programme and WE Hub initiatives
Skill Training for Village Women
PAYAGPURE runs a quarterly skill development programme for village women in Payagpur and surrounding areas, teaching them the full Bilona ghee-making process as a livelihood skill.
- Quarterly 3-day training workshops — free of charge — for women in Payagpur and 5 neighbouring villages
- Training covers: A2 cow identification, milk quality testing, Bilona process, quality control, food safety, and packaging
- Graduates receive a PAYAGPURE Skill Certificate and get priority for employment or contract sourcing
- Long-term vision: A women's cooperative of A2 ghee producers across eastern Uttar Pradesh
